GOAT CHEESEMAKING

A workshop to learn about goat cheeses of Lombardy. The lesson will start with an overview of the indigenous breeds of the region, including husbandry methods. Then the two major techniques of goat milk cheesemaking will be covered (lactic and rennet) and, through a guided tasting, the characteristics of the cheeses will be highlighted.
