It has become one of the most powerful trade products of the farming industry, serves as the raw material for a great number of food products but not just that: the meat we consume is made from maize, as are milk, cheese, sugar, sauces, and drinks. Biodegradable food packaging and the disposable plates that we use are made from maize, just like the shopping bag that we carry our food in, and the biogas that we burn . . .” (from the SLOW MAYS Manifesto). Local maize for human consumption (in the former Institute for Maize Cultivation of Bergamo-Stezzano there are more than 400 types registered) also represents a precious genetic and food resource that can be brought to the table in novel, tasty, and interesting ways.
