Choices in consumption are conditioned by the process of globalization and societal tendencies towards individualization. Consumers are faced with the financial difficulties and seek to optimize the relationship between quality and price. A creative few are applying a model of critical consumption, with increased attention towards sustainability. There is a close tie between sustainable agriculture and the spread of a new style of consumerism, one that respects human resources and animal welfare. These tendencies must be supported by the actions of international institutions, civil societies, and individuals. These factors will be explored in this conference, with special attention to social, anthropological and legal aspects. This will be time for participation from the students and local academic, cultural and slow food entities.
